Cleaning Commercial Kitchens
You will appreciate with all the changes in the law regarding both food safety and fire safety in restaurant kitchen you need to have everything in place to protect your business. This is of course not just for restaurants and pubs but applies to all aspects of cleaning commercial kitchens.
For example:-
Now all pubs, bars and restaurants must fully comply with all the standards laid out in the 2005 Regulatory Reform (Fire Safety) Order.
That effectively means you have to be able to prove beyond all reasonable doubt that you have been cleaning the kitchen extractor duct system. This needs to be done in full accordance with the industry’s leading Code of Practice document, TR/19 section 7.
If fire breaks out and you cannot prove that you cleaned to at least that standard you could find yourself facing a corporate manslaughter charge.
Action required includes Kitchen Extract Cleaning on a regular basis.
In addition if the kitchen extract cleaning is not carried out and a fire breaks out your insurance company will be asking you for proof it was done to BS EN 15780 cleaning standards. If you cannot prove that to their satisfaction they can and will refuse to pay out for any damage and losses.
Action required includes Kitchen Extract Cleaning on a regular basis.
If a customer (or staff member) claims they were made ill due to contaminated air from your ducting system. You have to prove to the Health and Safety Commission that your kitchen extract and the full air duct was cleaned and regularly maintained to the required standards i.e. BS EN 15780. In addition your insurance company will refuse to pay any compensation awarded if you cannot prove the ducting is clean.
Action required includes Kitchen Extract Cleaning and air duct system cleaning.
Is your Kitchen Extract Cleaning done often enough and to the standard required above? If you are not sure contact us to arrange a visit and discuss usage and frequency of cleaning that will be required to maintain standards to both BS 15780 and the TR/19 Code of good practice guidance publication.
